This refreshing cocktail is great for the summer months. The lemon juice and apricot give off a slight tart taste and the ginger beer lends an energizing spice. Hendrick’s gin is my favorite to use for making cocktails. It’s infused with rose petal and cucumber. The flavor is smooth and floral. Make this drink for your weekend BBQ’s or summer get-togethers. This will be a crowd-pleaser for sure.
2 tablespoons apricot jam (I used Sweet Lady Cook)
Juice from ½ lemon
1½ oz Hendrick’s gin
In a glass, add two tablespoons of apricot jam and muddle well. Pour in lemon juice, gin and fill with ice. Top off with ginger beer and enjoy!
